Choosing Wood Species for an End-Grain Board: What Glues, What Moves, What You Cannot Eat Off
A good end-grain cutting board needs dense, closed-pore hardwood: maple, oak, ash, beech, walnut. Density matters for how the surface holds up under a knife, and tangential shrinkage between neighboring species in the same glue-up should stay close, or the joint takes the strain every time humidity swings. Open-pore softwoods and toxic exotic species have no place on a food-contact board.
A striking mix of species in a photo and a cutting board that survives a working kitchen are two different design problems. A board that splits at the glue line after six months does not care how many strips of purpleheart went into it.
Density decides whether the board survives the knife
End-grain construction puts the fibers vertical, which is exactly why butchers and cooks favor it: the cut self-heals and the edge stays sharper longer than on a face-grain board. That advantage only holds on dense stock. Soft pine or spruce dents under a blade, picks up deep gouges fast, and starts looking like a cheese grater within a season.
A useful density range: hard maple runs about 44 lb/ft3 (705 kg/m3), white ash about 42 lb/ft3 (675 kg/m3), European beech about 45 lb/ft3 (720 kg/m3), white oak about 47 lb/ft3 (755 kg/m3). That whole band works for a kitchen board. Hickory is denser still, around 51 lb/ft3 (815 kg/m3), and holds up fine, though it is noticeably harder on tools. Exotics like wenge or jatoba, in the 54 to 57 lb/ft3 range (870 to 910 kg/m3), take a beating from a knife with no problem, but they are slower to mill and heavier in hand than most makers expect on a first board that size.
Shrinkage: why a board should not be a species salad
Every species has its own tangential shrinkage, how much it moves across the grain as it dries or picks up moisture. Maple sits around 9.9 percent, mahogany closer to 5 percent, roughly half. Glue two species with very different shrinkage side by side, and the first humidity swing in the kitchen sends them moving at different rates. The joint absorbs that difference. A year or two later it splits, not from an impact, just from the board breathing unevenly for too long.
My working rule: keep neighboring species within 2 to 3 percentage points of tangential shrinkage on the same panel. Maple next to ash (9.9 percent and 7.8 percent) behaves fine. Maple next to mahogany (9.9 percent and 5.1 percent) is worth a test glue-up on scrap before you commit a whole batch of lumber to it.

Which woods stay off a kitchen board
Not every attractive species is safe for a surface you cut food on. The disqualifying reasons usually fall into one of three buckets: an open pore structure that traps moisture and bacteria (red oak, for instance, has large open pores that make it a worse choice than white oak for a food-contact surface, though it is fine for decorative accents), resins or oils with a sharp smell that transfers to food, or a dust that is a known respiratory or skin irritant when sanded.
With exotics like padauk or purpleheart, wear a mask and run dust collection. Sensitivity to the dust varies a lot person to person, and what does not bother one woodworker sends another home with a rash or a stuffed nose for the rest of the day. Before working an unfamiliar species for the first time, check its safety data. It takes a minute and it can save you a bad afternoon in the shop.
